I feel like poached eggs don’t get enough play. They kind of get lumped into “diet eggs” but I think a perfectly poached egg is something that is pretty freaking majestic. If I still ate toast, these would be amazing on some sourdough.
Crack the egg into a small bowl with some vinegar in it. Bring some water to a boil in a small pot. When boiling, whisk the water to create a vortex. Drop the egg and vinegar into the vortex and cook for about 2 minutes. Fish it out of the water with a slotted spoon. Bring the water back to a boil and repeat. Change the water after 2 eggs though.
