Pizza Quinoa

I came across a recipe for a one-pot pizza quinoa and just kind of went from there. Totally random, thought it sounded good, but could see where I could change a few things.  What happened was soooooooooooooooooooooooooooo good.  OMG.  Yes.  And it was easy to make and pretty good for you.  Totally would recommend!  Duh, I’m posting the recipe here, aren’t I?

Pizza Quinoa

2 pounds bulk pork sausage
1 red onion, thinly sliced
2 green bell peppers, cut into thin strips
2 cups quinoa
4 cups liquid (water, chicken stock, or milk)
2 cups shredded mozzarella
1 cup grated parmesan
1 carton cherry tomatoes, quartered
1 can black olives, roughly chopped
1/2 cup basil leaves, thinly sliced

Get your quinoa in a large pot and toast it up a bit over a hot flame before adding your liquid of choice.  Let it cook for about 20-25 minutes or until the majority of the liquid is absorbed.  Meanwhile…

Cook up your pork sausage of choice (I like it spicy!) in a pan.  Once it’s cooked through, remove it from the pan to a holding bowl.  Then throw in those onions and bell peppers and saute lightly until the onions start to go transparent.

You can also swap out your “toppings” for whatever pizza toppings you normally prefer.  Use whatever mix you like!

Once your quinoa is cooked, stir in your cooked sausage and veggies.  Add your cheeses and mix well.  Stir in the cherry tomatoes, olives, and basil.  Served topped with a little bit of marinara sauce and more cheese.  Delicious!
